Preheat the air fryer to 350°F and spray parchment paper with non-stick spray.
Combine ¼ cup granulated sugar and ground cinnamon and set aside
Mash ripe banana until it forms a smooth puree.
Add flour, ¼ cup of sugar,baking powder and salt and knead with lightly oiled hands and form a moist dough ball, adding up to1- 2 tablespoon flour if absolutely necessary
Roll dough into balls, (tablespoon-sized portions ) and place them on parchment paper, lined with an air fryer basket about 1 inch apart.
and spray with oil
Air fry for 6-7 minutes, or until they are fluffy and lightly golden
Remove from the Air fryer basket and immediately brush with melted coconut oil , Roll in a cinnamon-sugar mixture and Serve with chocolate ganache or date caramel.
