    Recipe Ingredients

    Extra virgin olive oil: 2 tablespoon for sautéing and flavor.

    Garlic: 2-3 cloves, roughly chopped for a robust aroma.

    Shallot: 1 medium, thinly sliced to add a mild onion flavor.

    Red wine vinegar: ½ cup for tanginess.

    Capers: 2 tablespoon with brine for a briny punch.

    Slivered almonds: ⅓ cup for crunch.

    Golden raisins: ⅓ cup for sweetness.

    Honey: 2 tablespoon for natural sweetness.

    Salt & pepper: to taste for seasoning.

    Lemon: Zest and juice of ½ for freshness.

    Chili flakes: to taste (optional) for a hint of spice.

    Sauté garlic,  shallots and slivered almonds until soft

    Simmer until it reduces by half.

    Stir in the capers, raisins, lemon Zest, honey, Chilli flakes, salt and pepper and allow the sauce to thicken

    Tips and Tricks to Nail the Recipe

    • Make sure to sauté the garlic and shallots over medium heat to prevent burning while achieving that perfect golden color.
    • Leftover sauce can be stored in an airtight container in the refrigerator for up to a week, making it a great make-ahead option.

    Ingredients
      

    • 2 tablespoon Extra virgin olive oil
    • 2-3 cloves garlic roughly chopped
    • 1 medium shallot thinly sliced
    • ½ cup red wine vinegar
    • 2 tablespoon capers with brine
    • ⅓ cup slivered almonds
    • ⅓ cup golden raisins
    • 2 tablespoon honey
    • Salt & pepper to taste
    • Zest and juice of ½ lemon
    • Chilli flakes to taste

    Instructions
     

    • In a small saucepan over medium heat and heat the olive oil. Add the garlic , shallots and slivered almonds sauté for 5 minutes or until soft and slightly browned . Add the red wine vinegar and lemon juice simmer until it reduces by half.
    • Stir in the capers, golden raisins, lemon Zest, honey, Chilli flakes salt and pepper let the mixture simmer for 4-5 minutes, allowing the sauce to thicken. Let sit for 10 minutes and pour over roasted vegetables, chicken, or fish and serve.
