Agrodolce Sauce- A rich Italian sauce perfect for vegetables, meats, and seafood.

- 2 tablespoon Extra virgin olive oil
- 2-3 cloves garlic roughly chopped
- 1 medium shallot thinly sliced
- ½ cup red wine vinegar
- 2 tablespoon capers with brine
- ⅓ cup slivered almonds
- ⅓ cup golden raisins
- 2 tablespoon honey
- Salt & pepper to taste
- Zest and juice of ½ lemon
- Chilli flakes to taste
In a small saucepan over medium heat and heat the olive oil. Add the garlic , shallots and slivered almonds sauté for 5 minutes or until soft and slightly browned . Add the red wine vinegar and lemon juice simmer until it reduces by half.
Stir in the capers, golden raisins, lemon Zest, honey, Chilli flakes salt and pepper let the mixture simmer for 4-5 minutes, allowing the sauce to thicken. Let sit for 10 minutes and pour over roasted vegetables, chicken, or fish and serve.
