Anzac Biscuits

Golden, chewy Anzac Biscuits made with oats, coconut, and golden syrup

Ingredients
  

  • 1 cup all purpose flour
  • 1 cup old fashioned rolled oats
  • 1 cup unsweetened desiccated coconut
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter
  • 2 tablespoons light corn syrup
  • ½ teaspoon baking soda
  • 1-2 tablespoons water

Instructions
 

  • Preheat the oven to 350°F , Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl, combine oats, flour, and coconut.Add sugars and combine.
  • In a large saucepan, melt the butter, add golden syrup and baking soda , when mixture will foam, remove from heat , add dry ingredients and mix with a spatula until combined. add 1 -2 tablespoon water if needed till it’s no longer dry.
  • scoop out and shape cookie dough into balls. Lightly flatten and place on the prepared cookie sheets an inch apart.
  • Bake in the preheated oven for 12-14 minutes, let it cool on the cookie sheets for 10 minutes, then serve.
