Golden, chewy Anzac Biscuits made with oats, coconut, and golden syrup

- 1 cup all purpose flour
- 1 cup old fashioned rolled oats
- 1 cup unsweetened desiccated coconut
- ½ cup light brown sugar
- ¼ cup granulated sugar
- ½ cup unsalted butter
- 2 tablespoons light corn syrup
- ½ teaspoon baking soda
- 1-2 tablespoons water
Preheat the oven to 350°F , Line a baking sheet with parchment paper and set aside.
In a mixing bowl, combine oats, flour, and coconut.Add sugars and combine.
In a large saucepan, melt the butter, add golden syrup and baking soda , when mixture will foam, remove from heat , add dry ingredients and mix with a spatula until combined. add 1 -2 tablespoon water if needed till it’s no longer dry.
scoop out and shape cookie dough into balls. Lightly flatten and place on the prepared cookie sheets an inch apart.
Bake in the preheated oven for 12-14 minutes, let it cool on the cookie sheets for 10 minutes, then serve.
