    Recipe Ingredients

    All-purpose flour: 1 cup, the base of the cookie dough.

    Old fashioned rolled oats: 1 cup, adds heartiness and texture.

    Unsweetened desiccated coconut: 1 cup, for a chewy coconut flavor.

    Light brown sugar: ½ cup, provides moisture and caramel notes.

    Granulated sugar: ¼ cup, for a touch of sweetness.

    Unsalted butter: ½ cup, melted for richness.

    Light corn syrup: 2 tablespoons, adds chewiness.

    Baking soda: ½ teaspoon, for leavening.

    Water: 2 tablespoons (see note*), to adjust dough consistency.

    Melt the butter, add golden syrup and baking soda

    Add dry ingredients

    Mix with a spatula until combined. add 1 -2 tablespoon water if needed

     Shape cookie dough into balls

    Tips and Tricks to Nail the Recipe

    • Make sure your butter is completely melted, but not hot, to ensure a smooth dough.

    Ingredients Method

    Ingredients
      

    • 1 cup all purpose flour
    • 1 cup old fashioned rolled oats
    • 1 cup unsweetened desiccated coconut
    • ½ cup light brown sugar
    • ¼ cup granulated sugar
    • ½ cup unsalted butter
    • 2 tablespoons light corn syrup
    • ½ teaspoon baking soda
    • 1-2 tablespoons water

    Method
     

    1. Preheat the oven to 350°F , Line a baking sheet with parchment paper and set aside.
    2. In a mixing bowl, combine oats, flour, and coconut.Add sugars and combine.
    3. In a large saucepan, melt the butter, add golden syrup and baking soda , when mixture will foam, remove from heat , add dry ingredients and mix with a spatula until combined. add 1 -2 tablespoon water if needed till it’s no longer dry.
    4. scoop out and shape cookie dough into balls. Lightly flatten and place on the prepared cookie sheets an inch apart.
    5. Bake in the preheated oven for 12-14 minutes, let it cool on the cookie sheets for 10 minutes, then serve.
