Light corn syrup: 2 tablespoons, adds chewiness.
Baking soda: ½ teaspoon, for leavening.

- Preheat the oven to 350°F , Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, combine oats, flour, and coconut.Add sugars and combine.
- In a large saucepan, melt the butter, add golden syrup and baking soda , when mixture will foam, remove from heat , add dry ingredients and mix with a spatula until combined. add 1 -2 tablespoon water if needed till it’s no longer dry.
- scoop out and shape cookie dough into balls. Lightly flatten and place on the prepared cookie sheets an inch apart.
- Bake in the preheated oven for 12-14 minutes, let it cool on the cookie sheets for 10 minutes, then serve.
