- 1 tablespoon Coconut oil
- 1 Egg white
- ¼ Cup Brown sugar
- ½ Cup Fine shredded coconut
- ½ teaspoon Vanilla
- A pinch of salt
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper
- In a large bowl, whisk the egg white until frothy.
- Add brown sugar, coconut oil and vanilla extract and Stir to combine
- Add cashews, coconut and salt and toss until cashews are well coated.
- Spread the cashews in a single layer onto the prepared baking sheet
- Bake in the preheated oven for about 1 hour , stirring once halfway through.
