Method
- Mix blackberries with sugar and lemon juice and set aside.
- With an electric mixer Whip up cream with ¼ cup white sugar and vanilla extract until soft peaks.
- Gently fold in the blackberry puree into the whipped cream.
- Making ribbons of white and red.
- Divide the blackberry fool into dessert bowls
- Top with blackberries, blackberry puree and mint (optional)
