Blackberry Fool

Ingredients
  

  • 1 cup blackberries + extra for garnish
  • 2 Tablespoons white sugar
  • 1 teaspoon lemon juice
  • 1 ½ cups heavy whipping cream
  • ¼ cup white sugar
  • ¼ teaspoon vanilla extract

Instructions
 

  • Mix blackberries with sugar and lemon juice and set aside.
  • With an electric mixer Whip up cream with ¼ cup white sugar and vanilla extract until soft peaks.
  • Gently fold in the blackberry puree into the whipped cream.
  • Making ribbons of white and red.
  • Divide the blackberry fool into dessert bowls
  • Top with blackberries, blackberry puree and mint (optional)
