    Blackberries: 1 cup, plus extra for garnish.

    White sugar: 2 Tablespoons, for mixing with blackberries.

    Lemon juice: 1 tsp, to enhance the blackberry flavor.

    Heavy whipping cream: 1 ½ cups, for that luxurious texture.

    White sugar: ¼ cup, for sweetening the whipped cream.

    Vanilla extract: ¼ teaspoon, for depth of flavor.

    Mix blackberries with sugar and lemon juice

    Whip up cream with sugar and vanilla extract until soft peaks.

    Ingredients Method

    Ingredients
      

    • 1 cup blackberries + extra for garnish
    • 2 Tablespoons white sugar
    • 1 teaspoon lemon juice
    • 1 ½ cups heavy whipping cream
    • ¼ cup white sugar
    • ¼ teaspoon vanilla extract

    Method
     

    1. Mix blackberries with sugar and lemon juice and set aside.
    2. With an electric mixer Whip up cream with ¼ cup white sugar and vanilla extract until soft peaks.
    3. Gently fold in the blackberry puree into the whipped cream.
    4. Making ribbons of white and red.
    5. Divide the blackberry fool into dessert bowls
    6. Top with blackberries, blackberry puree and mint (optional)
