In a large mixing bowl, place the all-purpose flour, sugar, and salt. Add the cubed, cold butter, work it into the flour and prepare coarse mixture
Gradually add the cold water and mix gently until the dough comes together, wrap in cling film and refrigerate for 30 minutes.
Preheat your oven to 400°F (200°C).
On a floured surface roll out a disk of dough into a large circle about 5mm thickness.
transfer to a parchment-lined baking sheet and fill it with fig mixture in the center of the dough leaving a 2-inch around the edges.
Sprinkle sliced almond and thyme over the layer of fig mixture
Fold the edge of the dough up over the fig filling, pleating as you go.
Brush the rim of the dough with the beaten egg
Bake for 30-35 minutes, or until golden brown and the figs are bubbly. Cool on the baking sheet for about 10 minutes, slice and serve warm with a drizzle of honey!!
