Fig Galette

Rustic Fig Galette with Almonds and Thyme - an elegant dessert with a hint of herbal flavor.

Ingredients
  

  • Fresh figs – 8-10 halved
  • ½ cup almonds sliced
  • 1 ½ cups All-purpose flour
  • ½ cup butter – 1 stick, cold and cubed
  • ¼ cup Sugar
  • 2 tablespoon honey
  • ¼ teaspoon of salt
  • 3-4 tablespoons cold water
  • 2-3 spring Fresh thyme
  • 1 egg beaten for egg wash

Instructions
 

  • In a large mixing bowl, place the all-purpose flour, sugar, and salt. Add the cubed, cold butter, work it into the flour and prepare coarse mixture
  • Gradually add the cold water and mix gently until the dough comes together, wrap in cling film and refrigerate for 30 minutes.
  • Preheat your oven to 400°F (200°C).
  • On a floured surface roll out a disk of dough into a large circle about 5mm thickness.
  • transfer to a parchment-lined baking sheet and fill it with fig mixture in the center of the dough leaving a 2-inch around the edges.
  • Sprinkle sliced almond and thyme over the layer of fig mixture
  • Fold the edge of the dough up over the fig filling, pleating as you go.
  • Brush the rim of the dough with the beaten egg
  • Bake for 30-35 minutes, or until golden brown and the figs are bubbly. Cool on the baking sheet for about 10 minutes, slice and serve warm with a drizzle of honey!!
