    This Fig Galette recipe holds a special place in my heart as it represents the beautiful fruit of summer and early fall. I fell in love with figs during a visit to a quaint farmers market, where I observed their rich purple hue and luscious sweetness. This galette not only highlights the figs but also showcases delightful almond and thyme notes that elevate the flavors. Trust me, you won’t want to miss out on this perfect balance of sweet and savory.

    Recipe Ingredients

    Fresh figs: 8-10, halved for a sweet and juicy filling

    Sliced almonds: ½ cup to add a crunchy texture

    All-purpose flour: 1 ½ cups for a tender dough

    Butter: ½ cup (1 stick), cold and cubed for flakiness

    Sugar: ¼ cup to sweeten the crust

    Honey: 2 tablespoon to enhance the fig filling

    Salt: ¼ teaspoon to balance the flavors

    Cold water: 3-4 tablespoons to bring the dough together

    Fresh thyme: 2-3 springs for a fragrant touch

    Egg: 1 beaten for egg wash to achieve a golden crust

    Gently mix all-purpose flour, sugar, salt, cold butter and water until the dough comes together

    Combine the halved figs and honey.

    Roll out a disk of dough and  fill it with fig mixture 

    Fold the edge of the dough up over the fig filling, pleating as you go.

    Tips and Tricks to Nail the Recipe

    • Ensure your butter is cold when making the dough to achieve a flaky texture.
    • Store leftover galette in an airtight container in the fridge for up to 3 days, or reheat in the oven for a few minutes to enjoy warm.

    Ingredients
      

    • Fresh figs – 8-10 halved
    • ½ cup almonds sliced
    • 1 ½ cups All-purpose flour
    • ½ cup butter – 1 stick, cold and cubed
    • ¼ cup Sugar
    • 2 tablespoon honey
    • ¼ teaspoon of salt
    • 3-4 tablespoons cold water
    • 2-3 spring Fresh thyme
    • 1 egg beaten for egg wash

    Method
     

    1. In a large mixing bowl, place the all-purpose flour, sugar, and salt. Add the cubed, cold butter, work it into the flour and prepare coarse mixture
    2. Gradually add the cold water and mix gently until the dough comes together, wrap in cling film and refrigerate for 30 minutes.
    3. Preheat your oven to 400°F (200°C).
    4. On a floured surface roll out a disk of dough into a large circle about 5mm thickness.
    5. transfer to a parchment-lined baking sheet and fill it with fig mixture in the center of the dough leaving a 2-inch around the edges.
    6. Sprinkle sliced almond and thyme over the layer of fig mixture
    7. Fold the edge of the dough up over the fig filling, pleating as you go.
    8. Brush the rim of the dough with the beaten egg
    9. Bake for 30-35 minutes, or until golden brown and the figs are bubbly. Cool on the baking sheet for about 10 minutes, slice and serve warm with a drizzle of honey!!
