Recipe Ingredients

Fresh figs: 8-10, halved for a sweet and juicy filling
Sliced almonds: ½ cup to add a crunchy texture
All-purpose flour: 1 ½ cups for a tender dough
Butter: ½ cup (1 stick), cold and cubed for flakiness
Sugar: ¼ cup to sweeten the crust
Honey: 2 tablespoon to enhance the fig filling
Salt: ¼ teaspoon to balance the flavors
Cold water: 3-4 tablespoons to bring the dough together
Fresh thyme: 2-3 springs for a fragrant touch
Egg: 1 beaten for egg wash to achieve a golden crust

Gently mix all-purpose flour, sugar, salt, cold butter and water until the dough comes together

Combine the halved figs and honey.

Roll out a disk of dough and fill it with fig mixture

Fold the edge of the dough up over the fig filling, pleating as you go.

- Gradually add the cold water and mix gently until the dough comes together, wrap in cling film and refrigerate for 30 minutes.
- Preheat your oven to 400°F (200°C).
- On a floured surface roll out a disk of dough into a large circle about 5mm thickness.
- transfer to a parchment-lined baking sheet and fill it with fig mixture in the center of the dough leaving a 2-inch around the edges.
- Sprinkle sliced almond and thyme over the layer of fig mixture
- Fold the edge of the dough up over the fig filling, pleating as you go.
- Brush the rim of the dough with the beaten egg
- Bake for 30-35 minutes, or until golden brown and the figs are bubbly. Cool on the baking sheet for about 10 minutes, slice and serve warm with a drizzle of honey!!
