To a mixing bowl, using a hand mixer, beat cream cheese, ½ cup sugar, lemon juice and vanilla until smooth and creamy. Fold in the strawberries.
On a clean dry work surface, set out the egg roll wrapper with one corner pointing at you
top with 2-3 tablespoons of the cream cheese mixture.
Use water to wet the edges of the wrapper. Then fold up the bottom corner to just over the cream cheese mixture. Roll to fold in the cream cheese mixture.

Continue rolling tightly so nothing leaks out until the filling is fully wrapped. Spray egg roll with cooking oil.
And Air Fry in a preheated airfryer for 6-7 minutes, or until golden brown, flipping halfway through. You may need to work in batches,
Transfer the egg rolls to a plate to cool.
Dust with confectioners' sugar and enjoy!!
