Strawberry Cheesecake Egg Rolls
Ingredients
- One 8-ounce package cream cheese room temperature
- ¾ cup sugar divided
- 1 teaspoon lemon juice
- 1 pound fresh strawberries washed, hulled, diced
- 12 egg roll wrappers
- water for wetting the edges of the egg roll wrappers
- confectioners' sugar for topping
- 2 tablespoons olive oil
Instructions
- To a mixing bowl, using a hand mixer, beat cream cheese, ½ cup sugar, lemon juice and vanilla until smooth and creamy. Fold in the strawberries.
- On a clean dry work surface, set out the egg roll wrapper with one corner pointing at you
- top with 2-3 tablespoons of the cream cheese mixture.
- Use water to wet the edges of the wrapper. Then fold up the bottom corner to just over the cream cheese mixture. Roll to fold in the cream cheese mixture.
- Now fold in the right and left corners of the wrapper to the center lightly pressing to seal. seal fold Using more water
- Continue rolling tightly so nothing leaks out until the filling is fully wrapped. Spray egg roll with cooking oil.
