    This Banana Pumpkin muffins recipe is special to me because it brings together two of my favorite ingredients: bananas and pumpkin. Both are versatile fruits that add moisture and richness to baked goods. Growing up, my mom would often whip up banana muffins whenever we had ripe bananas at home. Now, I like to take that nostalgia and add a seasonal twist when pumpkin is in abundance during the fall. It’s a warm hug of flavors that reminds me of home!

    Recipe Ingredients

    Chocolate chips: 1 cup, for a melty, rich chocolate flavor.

    Ripe bananas: 2 medium, mashed, adding natural sweetness and moisture.

    Butter: ¾ cup, for a rich texture.

    Eggs: 2, to bind the ingredients together.

    Pumpkin puree: 1 cup, for that signature fall flavor.

    Vanilla: 1 tsp, to enhance the flavors.

    All-purpose flour: 1 ¾ cups, the base of our muffin.

    Baking soda: 1 tsp, for lift.

    Baking powder: 1 tsp, to ensure a light texture.

    Salt: 1 tsp, to balance the sweetness.

    White sugar: ½ cup, for sweetness.

    Brown sugar: 1 cup, to add depth and moisture.

    Pumpkin pie spice: 1 tsp, for a warm, aromatic kick.

    Whisk sugars and butter.

    Add eggs, one at a time and  mix well

    Add pumpkin puree and bananas and stir to combine 

    Scoop batter into prepared muffin liners.

    Bake for 18-20 minutes

    Let muffins cool before serving

    Tips and Tricks to Nail the Recipe

    • Make sure to use very ripe bananas for the best sweetness and flavor.
    • Store leftover muffins in an airtight container to keep them fresh for up to 3 days.
    • Feel free to substitute half of the all-purpose flour with whole wheat flour for a healthier version.

    Ingredients
      

    • 1 cup chocolate chips
    • 2 medium ripe bananas mashed
    • ¾ cup butter
    • 2 eggs
    • 1 cup pumpkin puree
    • 1 teaspoon vanilla
    • 1 ¾ cups all-purpose flour
    • 1 teaspoons baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • ½ cup white sugar
    • 1/1 cup brown sugar
    • 1 teaspoon pumpkin pie spice

    Instructions
     

    • Preheat oven to 350*F
    • Line muffin tins with paper liners
    • In a large mixing bowl whisk sugars and butter for 2 minutes.
    • Add eggs, one at a time and mix well
    • Add pumpkin puree and bananas and stir to combine
    • Add baking soda, baking powder, salt and pumpkin pie spice. Mix well.
    • Add 1 cup flour, mix well add remaining flour and mix until just combined , stir in chocolate chips
    • Using a cookie scoop, scoop batter into prepared muffin liners.
    • Bake for 18-20 minutes, or springy and golden and toothpick comes out clean from the center of a muffin.
    • transfer to a cooling rack and the Let muffins cool before serving (about 5 minutes)
