Red wine vinegar: ½ cup for tanginess.

Salt & pepper: to taste for seasoning.

Sauté garlic, shallots and slivered almonds until soft

Simmer until it reduces by half.

Agrodolce Sauce
Ingredients
- 2 tablespoon Extra virgin olive oil
- 2-3 cloves garlic roughly chopped
- 1 medium shallot thinly sliced
- ½ cup red wine vinegar
- 2 tablespoon capers with brine
- ⅓ cup slivered almonds
- ⅓ cup golden raisins
- 2 tablespoon honey
- Salt & pepper to taste
- Zest and juice of ½ lemon
- Chilli flakes to taste
Instructions
- In a small saucepan over medium heat and heat the olive oil. Add the garlic , shallots and slivered almonds sauté for 5 minutes or until soft and slightly browned . Add the red wine vinegar and lemon juice simmer until it reduces by half.
- Stir in the capers, golden raisins, lemon Zest, honey, Chilli flakes salt and pepper let the mixture simmer for 4-5 minutes, allowing the sauce to thicken. Let sit for 10 minutes and pour over roasted vegetables, chicken, or fish and serve.
