    Pecans: ¼ cup, chopped, for a delightful crunch.

    Lemon juice: 1 tsp, enhancing the peach flavor with a zesty twist.

    Unsalted Butter: ¼ cup, softened, for a rich and creamy texture.

    Brown sugar: ¼ cup, adding sweetness and depth to the dish.

    Cinnamon powder: ½ teaspoon, infusing warm spice into the cobbler.

    Vanilla extract: ½ teaspoon, divided, for a fragrant touch.

    Ingredients
      

    • 11/2 cups Peaches fresh or frozen Peeled and slice
    • ¾ cups Almond flour
    • ¼ cup pecans
    • 1 teaspoon lemon juice
    • ¼ cup Butter Unsalted softened
    • ¼ cup brown sugar
    • ½ teaspoon Cinnamon powder
    • ½ teaspoon Vanilla extract Divided
    • ½ teaspoon Baking powder
    • A pinch of salt

    Method
     

    1. Preheat your oven to 350°F (175°C).
    2. In a large bowl, toss the sliced peaches with lemon juice, sugar, cinnamon, and salt. Set aside.
    3. In another bowl, place Almond flour,vanilla and butter ,use a pastry cutter or your hands to combine butter into the mixture until it resembles coarse crumbs.
    4. Spread the prepared peach mixture into a greased baking dish and bake for 5-7 minutes
    5. spoon the cobbler topping over the peaches, spreading it evenly with a spatula
    6. Bake for 35-40 minutes, until the filling is soft , top is golden brown and the peaches are bubbling around the edges.
    7. Serve warm with yoghurt, whipped cream or keto ice cream.
