    This No bake Carrot Cake Bites recipe is special to me because it combines my love for healthy eating with my passion for dessert. Growing up, I adored carrot cake, especially the cream cheese frosting. These carrot cake balls capture that vibrant taste and nostalgia but in a healthy, guilt-free form. Plus, they’re incredibly easy to whip up, making them perfect for a busy week ahead!

    Recipe Ingredients

    Rolled Oats: 1 cup, the base for texture and nutrition.

    Shredded Carrots: 2 medium carrots, provides natural sweetness and moisture.

    Walnuts: ¾ cup, adds crunch and healthy fats.

    Unsweetened Shredded Coconut: ½ cup, for added texture and flavor.

    Medjool Dates: 6-7 pitted, a natural sweetener that binds everything together.

    Honey: ¼ cup, to enhance sweetness.

    Vanilla Extract: 1 teaspoon, for depth of flavor.

    Ground Cinnamon: ½ teaspoon, for that classic carrot cake spice.

    Ground Ginger: ¼ teaspoon, to warm up the flavor profile.

    Ground Nutmeg: ⅛ teaspoon, adds aromatic notes.

    Ground Clove: ⅛ teaspoon, for a hint of spiciness.

    Pinch of Salt: to enhance all the flavors.

    Raisins: ¼ cup, to add an extra touch of sweetness and chewiness.

    Pulse oats, walnuts, shredded coconut , dates and spices

    Add wet ingredients and  Process

    Process  till mixture  becomes dough-like consistency.

    Gently fold in raisins  

    Tips and Tricks to Nail the Recipe

    • Be careful not to over-process the mixture, as it can become greasy; pulse until just combined.
    • If you prefer a sweeter treat, feel free to add a few more Medjool dates or a bit more honey.
    • Customize by swapping walnuts for your favorite nut or using pecans for a unique twist.

    Ingredients
      

    • 1 cup rolled oats
    • 2 medium carrots shredded
    • ¾ cup walnuts
    • ½ cup unsweetened shredded coconut
    • 6-7 pitted Medjool dates
    • ¼ cup honey
    • 1 teaspoon vanilla extract
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon ground ginger
    • ⅛ teaspoon ground nutmeg
    • ⅛ teaspoon ground clove
    • Pinch of salt
    • ¼ cup raisins

    Instructions
     

    • Place oats, walnuts and shredded coconut to the food processor and pulse briefly, now add dates and spices Pulse again until the mixture becomes crumbly Add wet ingredients and Process till mixture becomes dough-like consistency. Do not over-process the mixture, or it could become greasy.
    • Transfer the mixture to a bowl. Gently fold in raisins
    • Scoop 1 -1.5 tablespoon mixture at one time and make small bit size balls.
    • Place them in the fridge to let the carrot cake balls firm up for 1 hour. Serve or store for later in an airtight container in the fridge for up to 1 week.
