Get ready for a delightful flavor explosion with these Goat Cheese and Cranberry Truffles! This easy-to-make appetizer offers a perfect balance of tangy goat cheese, sweet honey, and crunchy pecans, making it an irresistible treat for any occasion. Whether you're hosting a dinner party, or holiday gathering, or just looking for a snack to satisfy your taste buds, these truffles are sure to impress.

This recipe holds a special place in my heart as it was shared with me by a dear friend during a cozy fall gathering. We paired these truffles with various crackers and watched as our guests couldn't resist going back for seconds (and thirds!). They are not only delicious but also incredibly versatile, as you can easily customize them with different herbs or nuts. I hope you'll enjoy them as much as we do!

    Recipe Ingredients

Soft goat cheese: 8 oz (225 g), creamy and tangy base for the truffles.

Cream cheese: 4 oz (115 g), adds a smooth richness to the mixture.

Honey: 2 tablespoon plus extra for garnish, brings sweetness and enhances flavor.

Brown sugar: 1 tablespoon, for a hint of caramel flavor.

Dried cranberries: ½ cup, adds chewiness and tartness.

Toasted chopped pecans: 1 cup, for crunch and nutty flavor.

Fresh rosemary: 2 tbsp, finely chopped for a refreshing aromatic touch.

    Finely chop dried cranberries

Beat together the goat cheese, cream cheese, and brown sugar until light and fluffy.

Add toasted chopped pecans, cranberries, rosemary and honey
    fold to combine.

Gently roll the cheese mixture into balls, with your hands.

Tips and Tricks to Nail the Recipe

    • For a smoother texture, make sure both the goat cheese and cream cheese are at room temperature before mixing.
    • Store any leftovers in an airtight container in the refrigerator for up to a week.
    • You can substitute pecans for walnuts or almonds if you prefer a different nut flavor.
    • These truffles make a fantastic addition to a charcuterie board or can be enjoyed with crackers, toothpicks, or pretzel sticks.
